What Product Tracking covers
Product Tracking records what your team makes, builds, gives away, and throws out during the day. It keeps prep and waste honest, which keeps COGS accurate.

Gallon prep
Log how many gallons of each tea you prepare. This tells you what was made versus what sold, and feeds production planning.
Jug builds
Record jug builds as your team assembles them. Like gallon prep, this tracks what was produced so production stays matched to demand.
Waste logging
When product is thrown out, log it as waste. Accurate waste entries:
- Keep cost of goods sold honest at month end.
- Surface patterns — repeated waste of the same item points to over-prepping or a PAR that needs adjusting.
Giveaways
A giveaway is product given to a customer or used for a promotion rather than sold. Log giveaways separately from waste so the two are not confused.
Some snack products are counted by the case in inventory but given away as individual pieces. The platform applies a waste-pack override for those items so a handful of cups is not costed as a handful of cases. The EA→CS conversion shown in the giveaway form is what the system will store.
Why it matters
End-of-month COGS depends on prep, waste, and giveaway data being complete. Skipped or rushed entries here show up as unexplained variances at the close.
Tip: Log waste and giveaways as they happen, not at the end of the shift — end-of-shift recall is where accuracy is lost.
